Excellent for the properties it gives us: in the corollas facing the sun resides the secret that only bees can understand.
If honey cannot undergo treatments of any kind, this is even more true for our 100% organic product. Maximum care and attention naturally occur at every phase. Man’s work begins later, after the intense and frenetic work of the bees themselves, whose hives are located on our land in areas chosen on the basis of the surrounding flowering plants. Each of our interventions is characterised by delicacy and precision. We begin with extraction from the honeycomb by centrifugal force, followed by the decanting phase, that is the rest period before filtering.
The last step involves crystallization, a phase that varies according to the quantity of sugar contained in the various kinds of honey. It can last for just a few weeks or as long as a year. The crystallization is very important because it preserves the precious nutrients of the honey. Only honey that is crystallized or creamy, in fact, has not undergone heat treatments that deplete its natural properties.


Treat yourself to the pleasure of observing the tireless work of these small creatures during the various flowerings of rosemary, sage, mint, thyme and lavender which, together with the local acacias, cherry trees, lindens, hazelnuts and all of the other spontaneous essences give rise to our honey.
Extracted at the end of the lavender flowering, it gathers in magical mellifluence all of the scents of our aromatic plants, harmonized in a symphony conducted by the bees themselves. Our expert beekeeper, like a great maestro, limits himself to directing and setting the rhythm of this joyful concert, through the extraction in loco, the maturation, and the packaging. Right there, on the edge of the woods.


Not always, but only in certain propitious seasons, and thanks to our almost 20,000 lavender plants, if the sun, wind, rain and moon are all favourable, we produce a small and precious selection of honey, unique and rare, with delicate sweetness and amber in colour, and with greater fluidity. This extremely precious honey is packaged in 250 gr jars, and is ideal for sweetening tisanes and tea, for small afternoon breaks.
The value of the biodiversity of a rural, farm environment is a concept that goes beyond the methods of cultivation without pesticides or chemical fertilizers. In signifies respecting, protecting, and promoting a delicate and complex habitat in which spontaneous species are observed and cared for, and harmonized with cultivated species. In this environment we strive to favour all of the vegetal and zoological elements that together create this delicate balance.
With this concept in mind, we have placed in the various rural sites almost 100 hives with families of local bees. Their precious labour finds only partial expression in the honeys, pollens, and propolis that we produce. Their other equally precious, but hidden, work lies in the miracle of pollination that these bees give to the flora and biodiversity of the broader context, far beyond our cultivations. Bees are indispensable!


“You are what you eat” is also relevant for bees, who laboriously fly from one corolla to the next to drink their nectar. This will become 100% organic honey, thanks to the uncontaminated environment in which they thrive.
